Grandma's recipes :
Dough: 250g Rye flour, 250g white flour, 2 eggs, salt, 1 tablespoon oil, Stuffing: 800g spinach, 4 tablespoons of parsley, 1 small onion, 40g butter, 1/4l milk, 60g Parmesan-cheese, salt, pepper, nutmeg, 1 tablespoon flour Mix all the ingredients and kneat well (for about 25 min in the kneading machine), let it rest for about 1 hour. The best thing would be prepare the dough the previous day and wrap it into a transparent film. Wash the spinach, Cook the spinach, pull it out and dip it into ice water. Squeeze it out and chop it with the mincer. Add the parsley and purée. Lighly roast the fine choopped onions in butter, add some flour and the hot milk. Mix well and let it reduce. Add the puréed spinach, salt, pepper, nutmeg and the parmesan-cheese. Let it cool down. Prepare the dough. Roll it with the dough-roller and cut it into discs. Put the spinach-filling in the mittle and close the "pocket". It it important to press the border well! Cook them for 5 min in salted water and serve with brown butter and parmesan.
