Grandma's recipes :

Schlutzkrapfen

Dough: 250g Rye flour, 250g white flour, 2 eggs, salt, 1 tablespoon oil,
Stuffing: 800g spinach, 4 tablespoons of parsley, 1 small onion, 40g butter, 1/4l milk, 60g Parmesan-cheese, salt, pepper, nutmeg, 1 tablespoon flour
Mix all the ingredients and kneat well (for about 25 min in the kneading machine), let it rest for about 1 hour. The best thing would be prepare the dough the previous day and wrap it into a transparent film. Wash the spinach, Cook the spinach, pull it out and dip it into ice water. Squeeze it out and chop it with the mincer. Add the parsley and purée.
Lighly roast the fine choopped onions in butter, add some flour and the hot milk. Mix well and let it reduce. Add the puréed spinach, salt, pepper, nutmeg and the parmesan-cheese. Let it cool down. Prepare the dough. Roll it with the dough-roller and cut it into discs. Put the spinach-filling in the mittle and close the "pocket". It it important to press the border well! Cook them for 5 min in salted water and serve with brown butter and parmesan.

 

Gnocchi alla Romana

(Senolina-panes roman's style)
1l milk, 250g semolina, 100g butter, 120g Parmesan-cheese, 2 egg-yolks, salt, tomato-souce
Warm up the milk until it boils and slowly add all of the semolina while keep on stiring. Proceed for about 15 min at a lower heat. Add half amount of salt. butter and parmesan cheese as well as the egg-yolk. Mix well. Put this mash on a humid working table and flatt. Let it completely cool down. Now take a glass with a diameter of about 5 cm, dip it into water and then cut out some discs. Take a flat casserole, butter it, put the "gnocchis" into it, sprinkle with parmesan and cover with remaining brown butter. Bake for abour 20-30 min at high heat.
Serve with Tomato-sauce. Happy cooking!

Banana-cake

200g butter, 4 eggs, 100g sugar, Vanillezucker, 300g flour, 1teaspoon baking powder, 3-4 medium bananas, 100g chocolate chips.
In a large bowl beat butter, sugar, and eggs. Now add the chocolate-chips and the cutted bananas (about 1-cm thick pieces). Put it on the casserole and put it into the preheated oven for about 20 min. (Medium heat). Have a nice meal!!
